Nourishing Lentil Soup with Sweet Potatoes

Ingredients:
- 1 cup red lentils
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 medium sweet potato, peeled and diced
- 4 cups vegetable broth
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1/2 teaspoon ginger powder
- Salt and pepper to taste
- Fresh cilantro or parsley, chopped for garnish (optional)
- Lemon wedges (for serving)
Instructions:
- Rinse red lentils thoroughly under cold water and set aside.
- In a large pot, sauté chopped onion and minced garlic in a little bit of olive oil until fragrant.
- Add diced carrots, celery, and sweet potato to pot and cook for a few minutes until they start to soften.
- Stir in the rinsed lentils, vegetable broth, turmeric, cumin, ginger powder, salt, and pepper. Bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and simmer for about 20–25 minutes or until lentils and vegetables are tender.
- Remove from heat and let soup cool slightly before serving.
- Garnish with fresh herbs and serve with lemon wedges for squeezing over the soup.
