Nourishing Lentil Soup with Sweet Potatoes

  • 1 cup red lentils
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 medium sweet potato, peeled and diced
  • 4 cups vegetable broth
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1/2 teaspoon ginger powder
  • Salt and pepper to taste
  • Fresh cilantro or parsley, chopped for garnish (optional)
  • Lemon wedges (for serving)


  1. Rinse red lentils thoroughly under cold water and set aside.
  2. In a large pot, sauté chopped onion and minced garlic in a little bit of olive oil until fragrant.
  3. Add diced carrots, celery, and sweet potato to pot and cook for a few minutes until they start to soften.
  4. Stir in the rinsed lentils, vegetable broth, turmeric, cumin, ginger powder, salt, and pepper. Bring the mixture to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for about 20–25 minutes or until lentils and vegetables are tender.
  6. Remove from heat and let soup cool slightly before serving.
  7. Garnish with fresh herbs and serve with lemon wedges for squeezing over the soup.
